Menu Plan Monday – Watermelon
MMMMMMMM, watermelon!
This is my absolute favourite fruit, especially juiced up. There is nothing like a nice, fresh glass of watermelon juice, or even a slice of watermelon, to make your day brighter.
Cheryl, of Gluten Free Goodness, has chosen watermelon for this week’s Menu Plan. It has been a very long time since I have done up a weekly menu for these Monday events, but then again, it’s been a long time since I have really been in the blogging spirit…until now! And what better way to get back up and running then to return to the weekly Menu Planning group. I have talked to my boyfriend for weeks about the importance of planning our weekly menu and we finally did just that last week…and again for this week. Now to keep on top of this because it would save everyone involved much hassle in the long run (not to mention daily grocery runs and lunch stresses).
This week Cheryl of Gluten Free Goodness,who has some great recipes as well as information, is hosting our Menu Plan Monday. She is looking for hosts/hostesses, so check it out!
Lunches:
- Cabbage Rolls (2 days)
- Tuna Casserole with a Twist
- Macaroni and Cheese (if needed)
*All of these recipes are from Carol Fenster’s 1,000 Gluten Free Recipes. I am working on getting lunches together and, hopefully, once I have found some decent containers, such as Tupperware, I will be a few days ahead of the game and have a bunch of frozen meals ready to go.
Dinners:
- Omelette with farm fresh eggs and salad from the garden
- Spaz-ghetti (don’t ask, I’ve just always called it that)
- Cabbage Rolls
- Fish & Chips (regular & sweet potato fries with chipotle mayo)
- French Toast
- Leftovers
Things to Bake:
- Cheesy Biscuits
- Muffins
As you can tell, I have some breakfast classics under dinners. I am not a big fan of heavy breakfasts, in fact, my usual breakfast is freshly made fruit juice and fruits early in the morning followed by toast or a muffin around 10. My boyfriend is the same way, but he has a protein shake for breakfast. It’s perfect! That way we can enjoy our breakfast favourites for dinner!
