Menu Swap – August 17

This week’s Menu Swap is being hosted by Mary Frances over at Gluten Free [Cooking School]. She is focusing on using up what is in her freezer and pantry – a great idea if you ask me. I don’t really have a lot in either my cupboards or freezer (in fact, I really need to stock up but I’m really hoping that I’ll be able to make it until I return to work), so I guess I’ll have to go grocery shopping…one of these days. Oh well, I have some delicious GF wraps still and bean burgers that I raced to put together for a last minute BBQ that ended up being Celiac Friendly – gotta love my friends!
I think that I’m going to be really picky this week as I ended up getting some gluten the other day. I am feeling much better, but my tummy tends to be sensitive for a few days afterwards.
I will probably increase my carb intake this week as I really need to get my rear out and focus on my dogs WALKING beside me with a leash (rather than their typical race around the block with me flying behind them) and a few runs as I have decided that I should return to soccer in the fall. I use to play when I was but a wee child and then made a brief return a few years ago, but I wasn’t able to stick with it as I was feeling the ill effects of CD without knowing it. However, I really need to get out there and play, but first I better make sure that I can endure some running without keeling over!!! I have one month – I’m sure that’s more than enough time if I run 3 times each week…NOT! But hey, it’s better than nothing.
GF MENU – August 17-23, 2008
Lunch – bean burger
Dinner – Parmesan Risotto & veggie wraps (it’s going to be a very late night)
Lunch – veggie wraps (I need to finish up my delicious wraps – check them out!)
Dinner – bean burger & green salad
Lunch – cucumber sandwich
Dinner – chicken caesar salad
Lunch – chicken caesar wraps
Dinner – salmon salad
Lunch – pasta salad
Dinner – ???
Lunch – pasta salad
Dinner – quinoa stuffed peppers
Saturday (heading to the States for some shopping)
Lunch – wraps
Dinner – probably eat out
I haven’t posted any breakfast (my usual fresh fruit/juices) or snacks (veggies & dip among energy bars) because I really have no clue. I’m kind of following my tummy cravings at the moment (not always a good thing, but I’ll see how it goes).
I also wanted to share a few of my pictures with you of my trip to Oregon at the beginning of the month – there are many more, but I chose the ones that give you a pretty good idea of what I was up to. I will posting the recipes later today that I promised from last week.

We were camping at Cape Lookout and there were some amazing hiking trails. However, the weather was very damp, making the trails very mucky, hence my muddy shoes. This was the actual Cape Lookout hike – a trail that is not for those who are afraid of heights.

Tierra del Mar

We went surfing at Cape Kiwanda. The beach was BEAUTIFUL!!! I had no qualms about walking around here in my bare feet.
