Fresh Quinoa Salad
MMMMMM! Quinoa!!! I absolutely love quinoa! Here is a quick and easy quinoa recipe that is ready within 30-45 minutes (depends on whether you’re as scattered as I am).
QUINOA SALAD *this is taken from Heather of Saladmaster Langley
2 cups of cooked quinoa
1/2 cup chopped dried apricots
1/2 cup dried cranberries
1/2 a small onion, finely chopped (cone #2)
1 bulb of garlic, finely chopped (cone #1)
1/2 cup of sliced RAW almonds
EVOO
Cook quinoa according to package directions, or if using Saladmaster, dump the quinoa into your small skillet and cover with water up to your first knuckle.
While that is cooking, chop the apricots, onion & garlic. Mix them in your serving bowl with the almonds, cranberries & EVOO.
When the quinoa is ready you can either let it sit for a little while to cool down, or serve it warm. Add it to your serving bowl and mix it all up.
NOTES:
- Add a couple of squirts of lemon or lime juice
- Add other veggies, such as shredded carrot or beet.
- Broccoli (I am paranoid about having pieces of this stuck in my teeth after) and peas
- This is great served over mixed greens
